Ingredients;
1)200-gram fettuccine
2)1 teaspoon oil
3)1 tablespoon garlic and chilly
4)as per the required flavor of olive oil
5)1/2 medium zucchini cut into strips
6)1 small red capsicum seeded and cut into strips
7)1 small yellow capsicum seeded and cut into strips
8)1 small green capsicum seeded and cut into strips
9)salt as per taste
10)If you want you can add to it prawns, beef, chicken boiled pieces
To Serve
8-10 tortilla chips
1/2cup grated mozzarella cheese
2 jalapenos chillis sliced.
Salsa!
1tablespoon oil
4 garlic cloves, crushed.
1 small onion, chopped.
2 fresh red chillis chopped.
1/2 small green capsicum chopped.
1/2 teaspoon roasted cumin powder
1 teaspoon red chili powder
1 cup tomato puree
salt to taste
1 tablespoon lemon juice
2 tablespoons chopped fresh coriander.
Method.
Preheat the oven to 180-degree Celsius/350 F/Gas mark up to 4
bring sufficient water to boil and cook the pasta for up to 5-7 minutes, but still firm to bite, string gently all the while. Drain it stir a little oil mix and keep aside. For salsa, heat the oil in a non-stick pan and sauté garlic onion. Add roasted cumin powder red chillis, capsicum, red chillis powder, and tomato puree. Stir well, add salt to taste. Cook for 2-3 minutes and remove from the heat. When cool add the lemon juice and coriander.
In another pan heat the garlic flavors olive oil and strips of zucchini and the red, yellow green capsicum salt to taste and stir fry for 3-4 minutes. Add boiled fettuccine and saute. Add the salsa and mix well. Crumble the tortilla chips and line the bottom of a large baking dish. Spread the pasta over a layer of chips and cover with grated mozzarella chees. Place the jalapeno chillis on the top and bake in a preheated oven for six to seven minutes or till the cheese melts completely. Serve hot.
